Beef and asparagus stir-fry



  • sugar - 3/4 tsp
  • cornstarch - 1 tsp
  • oil - 1 Tbsp
  • vinegar - 2 tsp
  • ground ginger - 3/4 tsp
  • soy sauce - 1/4 c
  • garlic clove, minced - 1 item
  • angel hair pasta - 6 oz
  • sherry - 2 Tbsp
  • asparagus
  • small tomato, diced - 1 item
  • top round steak, thinly sliced - 3/4 lb

How to make beef and asparagus stir-fry:

Break off the tough ends of the asparagus by bending the stalks and letting them break; discard the ends. Cut asparagus into 2-inch long pieces. Prepare pasta according to package directions, drain and return to pot to keep warm.

In a bowl, mix soy sauce, sherry, ginger, cornstarch, vinegar, sugar, garlic and 1/4 cup water. Add meat, tossing to coat well. Set aside. Heat oil in a wok or frying pan on high heat. Add asparagus and cook until tender, stirring constantly. Add meat and soy sauce mixture and cook, stirring constantly, until meat is well done and sauce thickens. Place meat mixture over pasta. Sprinkle tomatoes over the top and serve.
