Zucchini parmesan
Ingredients/Components
- butter, melted - 4 Tbsp
- Parmesan cheese, grated - 1/2 c
- each: salt, pepper and paprika - 1/2 tsp
How to make zucchini parmesan:
Scrub but do not peel zucchini; trim ends. Cut the zucchini into 2-inch lengths, then cut each length into quarters, lengthwise. Bring zucchini to a boil in salted water to cover; simmer until tender, but not soft. Drain thoroughly. Butter a 9-inch ovenproof dish; arrange zucchini in a layer over the bottom. Sprinkle with salt, pepper, paprika and cheese. Pour the melted butter over all. Place under the broiler until cheese is melted. Makes 6 servings.Recipe categories: Squash, Appetizers, Vegetables.
