Ingredients/Components

  • sugar - 6 c
  • pkg - 2 oz
  • lemon juice - 2 Tbsp
  • peeled and grated zucchini - 6 c
  • can crushed and drained pineapple - 1 oz
  • pineapple flavoring or omit - 1/4 tsp

How to make zucchini jam:

Cook zucchini and 1 cup water over medium heat; bring to boil. Reduce heat and cook an additional 6 minutes. Add lemon juice, pineapple and flavoring. Bring to a boil and cook 6 more minutes. Add dry gelatin; mix well. Pour into prepared jelly jars.
