Zucchini supreme
Ingredients/Components
- medium zucchini - 6 item
- carrots, shredded - 1 c
- onions, chopped - 1/2 c
- butter - 4 Tbsp
- can cream of chicken soup - 1 item
- sour cream - 1/2 c
- herb seasoned croutons
- Cheddar cheese, grated - 1/2 c
- Jack cheese, grated - 1/2 c
How to make zucchini supreme:
Wash and slice unpeeled zucchini about 1/2-inch thick. Cook slightly in small amount of salted water, covered. Saute onions and carrots in butter. Stir in undiluted chicken soup. Remove from heat; stir in sour cream.In casserole, layer zucchini, carrot mixture and croutons. Repeat this until all ingredients are used. Top with Cheddar and Jack cheese. Bake, uncovered, for 30 minutes, or until bubbly in a 350° oven. Makes 4 to 6 servings.
