Ingredients/Components
- zucchini - 2 c
- butter - 2 Tbsp
- Parmesan cheese - 1/4 c
- eggs - 2 item
- biscuit mix - 1/2 c
- dash of salt - 1 item
- dash of pepper - 1 item
- curry powder - 1 tsp
How to make zucchini fritters:
Stir together biscuit mix, cheese, salt and pepper. Stir in beaten eggs. Fold in zucchini. In skillet, melt butter over medium heat. Use 2 tablespoons mixture for each fritter. Fry 3 to 5 minutes on each side until brown. Yields 8 to 10 fritters.Recipe categories: Squash, Appetizers, Vegetables.
