Ingredients/Components
- salt - 1 tsp
- flour - 1/2 c
- egg, beaten - 1 item
- minced onion - 2 Tbsp
- minced parsley - 2 Tbsp
- oil for frying - 1 item
- carrot, grated - 1 item
- medium zucchini, grated - 2 item
- dash of freshly ground pepper - 1 item
How to make zucchini fritters:
Combine zucchini and salt in colander. Let stand 15 minutes and drain, squeezing out excess liquid with the back of a spoon. Combine with remaining ingredients, except oil. Drop by teaspoonful into hot oil.Recipe categories: Squash, Appetizers, Vegetables.
