Zucchini fritters
Ingredients/Components
- salt - 1 tsp
- flour - 1/2 c
- oil - 1 item
- egg, beaten - 1 item
- dash of pepper - 1 item
- minced onion - 2 Tbsp
- minced parsley - 2 Tbsp
- carrot, grated - 1 item
- medium zucchini, grated - 2 item
How to make zucchini fritters:
In colander, mix zucchini and salt; let drain about 15 minutes, squeezing out excess liquid with back of spoon. Mix well drained zucchini, carrot, onion, parsley, egg, flour and pepper. Drop by tablespoons into 1/2-inch of hot oil in skillet and fry until brown on both sides. Drain on absorbent paper. Serve hot. Makes about 12 or 14 servings.
