  • milk - 2 c
  • salt - 1 tsp
  • flour - 3 Tbsp
  • butter - 5 Tbsp
  • egg, beaten - 1 item
  • bread crumbs - 1 item
  • minced onion - 2 Tbsp
  • minced parsley - 1 Tbsp
  • celery salt - 1/2 tsp
  • dash of hot sauce - 1 item
  • sherry - 2 Tbsp
  • dash of black pepper - 1 item
  • minced green pepper - 1 Tbsp
  • fresh crabmeat - 1 lb
  • pimento, minced - 1 item

How to make crabmeat casserole:

Make white sauce of butter, flour and milk; then add next six ingredients. Remove from heat. Add sherry. Add little hot sauce to egg; then add egg to rest of sauce. Add hot sauce, salt, pepper and crabmeat. Put in 1 1/2-quart casserole; sprinkle top with bread crumbs, mixed with 1 tablespoon melted butter. Bake in 350° oven for 15 to 20 minutes. Serves 6 to 8.
