  • sugar - 3 c
  • cinnamon
  • eggs - 4 item
  • vanilla - 2 tsp
  • salt - 1/2 tsp
  • flour - 3 c
  • nutmeg - 1/2 tsp
  • oil
  • soda - 1 tsp
  • baking powder - 2 tsp
  • raisins optional - 1 c
  • nuts optional - 1 c
  • zucchini, grated - 3 c

How to make zucchini spice cake:

Mix in large bowl first 4 ingredients. Beat well until creamy. Combine next 6 ingredients and add to mixture, last of all add zucchini. Nuts and raisins are optional. Bake in greased 9 x 13-inch pan at 325° for 1 hour and 10 minutes.
