- margarine - 3 Tbsp
- garlic powder - 1 item
- salt and pepper - 1 item
- olive oil - 1/2 c
- tomatoes - 1 lb
- zucchini - 1 item
- small eggplant - 1 item
- string beans - 1 lb
- fresh peas or limas - 1 lb
- fresh mint - 1 item
- fresh dill - 1 item
- medium large onion - 1 item
How to make greek vegetables:
Saute zucchini, eggplant and onion in oil and butter. Add fresh vegetables, dill, mint and rest of ingredients. Cover and cook on low until tender.Recipe categories: Squash, Main dish, Green/yellow beans.
