Zucchini fritters
Ingredients/Components
- salt - 1/4 tsp
- oil - 1/4 c
- large eggs - 3 item
- pepper - 1/8 tsp
- grated onion - 2 Tbsp
- all-purpose flour, unsifted - 1/4 c
- medium green zucchini, shredded - 1 item
- medium yellow squash, shredded - 1 item
- large carrot, pared and shredded - 1 item
How to make zucchini fritters:
In large bowl, beat eggs, flour, onions, salt and pepper. Stir in vegetables. In large skillet, heat 1/4 cup oil. Drop batter by tablespoons into hot oil. Cook about 1 minute on each side or until golden brown. Drain on paper towel. Serve hot with Red Pepper Mayonnaise.Recipe categories: Squash, Appetizers, Vegetables.
