Squash relish
Ingredients/Components
- sugar - 4 c
- salt - 5 tsp
- vinegar - 3 c
- turmeric - 1 tsp
- onions - 4 c
- large jar pimientos - 1 item
- medium bell peppers - 4 item
- grated squash yellow - 12 c
- hot peppers for hot relish if desired - 4 item
- pickling spice in bag - 2 tsp
How to make squash relish:
Mix squash, peppers, onion and pimientos. Add salt. Stir well. Cover and let set 3 hours or overnight. Then boil vinegar and pickling spice for 2 or 3 minutes. Add sugar and turmeric. Drain squash. Pour syrup over squash. Heat but do not boil!Recipe categories: Squash, Appetizers, Spreads.
