Ingredients/Components

  • sugar
  • salt - 2 Tbsp
  • cider vinegar
  • ground cloves - 1 tsp
  • whole cloves - 2 item
  • mustard seed - 1 Tbsp
  • turmeric - 3/4 tsp
  • large green pepper, chopped - 1 item
  • whole celery seed - 3/4 tsp
  • zucchini 1/2-inch pieces - 3 lb

How to make zucchini pickles:

Combine zucchini, onions and green pepper in large roaster pan. Salt and garlic. Stir. Add 3 trays ice cubes. Mix through. Cover and let stand 3 hours. Combine vinegar, sugar, turmeric, mustard seed, celery seed and cloves in Dutch oven and bring to boil.

While vinegar is heating, drain vegetables and discard garlic. Squeeze vegetables and add to boiling liquid. Bring back to boiling and remove from heat. Pour into clean, hot jars. Leave 1/4-inch headspace. Wipe top of jars with warm damp cloth. Adjust lids. Process 15 minutes in boiling water bath, 2-inches water above jars. Remove jars from water and cool on wire rack. When cool, test seal. Makes 8 cups, two large mayo jars.
