Zucchini relish
Ingredients/Components
- sugar - 6 c
- salt - 5 Tbsp
- cornstarch - 3 4
- nutmeg - 3/4 tsp
- vinegar
- dry mustard - 1 Tbsp
- black pepper - 1/2 tsp
- celery seed
- turmeric - 3/4 tsp
- onions - 4 item
- zucchini squash - 12 c
- bell peppers 1 red, 1 green - 2 item
How to make zucchini relish:
Grate or chop 12 cups zucchini, onions and peppers and mix. Add salt and let stand 10 hours or overnight. Rinse well with water then drain well. Mix other ingredients in large kettle and cook until it starts to thicken.Add the vegetables and cook 30 minutes. If it is not thick enough, add a little more cornstarch. (Makes 7 pints.)
