Ingredients/Components

  • melted margarine - 1/2 c
  • eggs, beaten - 3 item
  • chopped onion - 3 Tbsp
  • parsley flakes - 2 tsp
  • salt and pepper to taste - 1 item
  • hot sauce - 1/2 tsp
  • round buttery cracker crumbs - 2 c
  • yellow squash, cut in 1/2-inch slices - 2 lb

How to make baked squash:

Cook squash in small amount of boiling water until tender. Drain well. Add remaining ingredients, except 1 cup cracker crumbs. Stir gently. Spoon mixture into lightly greased 1 1/2-quart casserole and sprinkle with remaining cracker crumbs. Bake at 350° for 35 to 40 minutes. Serves 6.
