Ingredients/Components

  • eggs - 2 item
  • vegetable oil - 1 item
  • grated Parmesan cheese - 2 Tbsp
  • salt and pepper to taste - 1 item
  • finely chopped fresh parsley - 1/2 tsp
  • medium onion, chopped - 1 item
  • medium zucchini - 2 item
  • garlic powder to taste - 1 item

How to make sunshine soup:

Wash and dry zucchini. Cut off ends. Cut in 2-inch long, 1/2-inch wide strips. Saute the chopped onion in a little vegetable oil. When onion is soft, but not brown, add the zucchini and salt and pepper. Cover with water and cook, uncovered, on medium heat until tender (do not overcook).

While this is cooking, beat eggs with parsley, grated Parmesan cheese and a little garlic powder. Mix this into the zucchini mixture with a fork. Add a little more water, just enough to make a broth. Serve hot with French bread and butter. Makes 4 servings.
