Ingredients/Components
- yellow squash, sliced thin - 6 c
- green bell pepper, diced - 2 item
- red bell peppers, diced - 2 item
- onions, diced - 3 lb
- salt - 3 Tbsp
- vinegar - 2 c
- sugar - 3 c
- mustard seed - 3 tsp
- celery seed - 2 tsp
How to make squash relish:
Mix squash, bell peppers, onion, and salt; let stand one hour, then drain. Mix vinegar, sugar, mustard seed, and celery seed; bring to a boil and cook 20 minutes; add vegetables. Boil for 1 minute; pack and seal in sterile jars. Chill before serving.Recipe categories: Squash, Appetizers, Spreads.
