Squash casserole
Ingredients/Components
- pkg - 1 oz
- sour cream - 1 c
- shredded carrots - 1 c
- chopped onion - 1/4 c
- can cream of chicken soup - 1 item
- margarine, melted - 1/2 c
- summer squash, sliced 6 c - 2 lb
How to make squash casserole:
In saucepan, cook sliced squash and chopped onion in boiling salted water for 5 minutes. Drain. Combine cream of chicken soup and sour cream. Stir in shredded carrots. Fold in drained squash and onion. Combine stuffing mix and margarine. Spread half of mixture in bottom of large casserole dish. Spoon vegetable mixture atop. Sprinkle remaining stuffing over the vegetables. Bake in a 350° oven for 25 to 30 minutes. Makes 6 servings.Recipe categories: Squash, Side dish, Casseroles.
