Squash casserole
Ingredients/Components
- pkg - 1 oz
- sour cream - 1 c
- margarine - 1/2 c
- shredded carrots - 1 c
- chopped onion - 1/4 c
- can cream of chicken soup - 1 item
- squash yellow or zucchini - 6 c
How to make squash casserole:
In saucepan, cook squash and onion in boiling, salted water for 5 minutes. Drain. Combine soup, sour cream and carrots in a separate bowl. Stir in drained squash and onion. Combine stuffing mix with margarine; spread half of stuffing mix in bottom of a 13 x 9-inch baking dish. Spoon vegetable mixture on top. Sprinkle remaining stuffing mixture on top. Bake at 350° for 25 to 30 minutes. (Leftovers can be frozen.)Recipe categories: Squash, Side dish, Casseroles.
