  • pkg - 1 oz
  • sour cream - 1 c
  • margarine - 1/2 c
  • shredded carrots - 1 c
  • chopped onion - 1/4 c
  • can cream of chicken soup - 1 item
  • squash yellow or zucchini - 6 c

How to make squash casserole:

In saucepan, cook squash and onion in boiling, salted water for 5 minutes. Drain. Combine soup, sour cream and carrots in a separate bowl. Stir in drained squash and onion. Combine stuffing mix with margarine; spread half of stuffing mix in bottom of a 13 x 9-inch baking dish. Spoon vegetable mixture on top. Sprinkle remaining stuffing mixture on top. Bake at 350° for 25 to 30 minutes. (Leftovers can be frozen.)
