Spinach apple toss
Ingredients/Components
- slices bacon, cut into 1/2-inch pieces - 8 item
- torn spinach leaves - 4 c
- hard-cooked eggs, cut into pieces - 2 item
- medium, red, tart cooking apples, cored and sliced 1/2 inch - 2 item
- Colby cheese, cut into very thin slices - 2 oz
- mayonnaise - 1/4 c
- orange juice - 2 Tbsp
How to make spinach apple toss:
In a 10-inch skillet, cook bacon over medium-high heat, stirring occasionally until browned. Drain off fat.Meanwhile, in a large bowl, combine all remaining ingredients except mayonnaise and orange juice. In small bowl, stir together the mayonnaise and orange juice. Add bacon to salad mixture. Pour 2 tablespoons of the dressing over salad; toss to coat. Serve with remaining dressing.
