Ingredients/Components
- boiling water
- quick cooking oatmeal
- Dough:3 eggs
- brown sugar
- oil Crisco - 3/4 c
- flour
- white sugar
- baking powder
- baking soda
- cinnamon
- salt - 3/4 tsp
- Mix ingredients for dough, adding oatmeal mixture
- milk - 6 Tbsp
- packed brown sugar - 1 c
- nuts - 2/3 c
- coconut
How to make oatmeal cake:
Dough:3 eggs1 1/2 c. brown sugar3/4 c. oil (Crisco)2 1/4 c. flour1 1/2 c. white sugar1 1/2 tsp. baking powder1 1/2 tsp. baking soda1 1/2 tsp. cinnamon3/4 tsp. salt Pour water over oatmeal and let stand for 10 minutes.Mix ingredients for dough, adding oatmeal mixture. Blend well. Bake at 375° for 30 to 35 minutes. Cool and frost.Frosting:1/2 c. butter6 Tbsp. milk1 c. packed brown sugar2/3 c. nuts1 1/2 c. coconut Melt butter. Add brown sugar and milk. Boil until bubbly. Add nuts and coconut. Frost cake when frosting is cooled.
