Rhubarb muffins
Ingredients/Components
- sugar - 3/4 c
- oil - 1/2 c
- buttermilk - 1/2 c
- egg - 1 item
- vanilla - 1 tsp
- salt - 1/2 tsp
- flour
- soda - 1/2 tsp
- nuts - 1/2 c
- rhubarb, cut small
- brown sugar - 1/4 c
- cinnamon - 1/2 tsp
- nuts, chopped - 1/4 c
How to make rhubarb muffins:
Beat first six ingredients. Sift together flour and soda. Add to first mixture. At the same time, add the nuts and rhubarb. Mix, just until moist. Put into 12 muffin tins.Mix last three ingredients and sprinkle on top of each muffin. Serve while still warm.
Substitute For Buttermilk: Put 1 tablespoon vinegar in 1/2 cup milk.
