Best of bran muffins
Ingredients/Components
- sugar - 4 tsp
- salt - 1/2 tsp
- buttermilk - 2 c
- baking soda
- vegetable oil - 1/2 c
- boiling water - 1 c
- molasses - 1/4 c
- raisins - 1 c
- whole wheat flour
- eggs, slightly beaten - 2 item
- shredded All-Bran cereal - 3 c
How to make best of bran muffins:
Combine cereal, oil and raisins in a large bowl. Add boiling water. Set aside to cool. Slightly combine eggs, buttermilk and molasses in a small bowl. Add to cooled mixture. Combine flour, sugar, baking soda and salt; add to cereal mixture. Stir just to moisten. Cover batter with plastic wrap, wax paper or damp towel and let stand up to 1 hour. Bake 20 to 25 minutes at 400° in baking tins 3/4 full. Makes 2 dozen.Recipe categories: Breads, Quick breads, Muffins.
