Mexican cornbread
Ingredients/Components
- yellow cornmeal - 1 c
- sifted flour - 1 c
- sugar - 1/4 c
- baking powder - 4 tsp
- salt - 1/2 tsp
- eggs - 2 item
- milk - 1 c
- shortening or bacon grease and oil - 1/4 c
- can cream-style corn - 1 item
- ground meat, browned - 1 lb
- salt and pepper to taste - 1 item
- small onion, chopped and browned - 1 item
- chopped jalapeno peppers - 4 item
How to make mexican cornbread:
Sift dry ingredients together. Add eggs, milk and shortening. Beat with a fork; do not overbeat. Add canned corn. Pour half into greased cast-iron heavy frypan. Add seasoned meat, onion and peppers. Add rest of cornmeal batter. Bake at 350° for 40 to 50 minutes.Recipe categories: Breads, Quick breads, North american.
