Ingredients/Components

  • yellow cornmeal - 1 c
  • sifted flour - 1 c
  • sugar - 1/4 c
  • baking powder - 4 tsp
  • salt - 1/2 tsp
  • eggs - 2 item
  • milk - 1 c
  • shortening or bacon grease and oil - 1/4 c
  • can cream-style corn - 1 item
  • ground meat, browned - 1 lb
  • salt and pepper to taste - 1 item
  • small onion, chopped and browned - 1 item
  • chopped jalapeno peppers - 4 item

How to make mexican cornbread:

Sift dry ingredients together. Add eggs, milk and shortening. Beat with a fork; do not overbeat. Add canned corn. Pour half into greased cast-iron heavy frypan. Add seasoned meat, onion and peppers. Add rest of cornmeal batter. Bake at 350° for 40 to 50 minutes.
