Pepper jack potatoes
Ingredients/Components
- medium potatoes, peeled and cut into 1/4 inch slices - 6 item
- medium onion, sliced - 1 item
- cup butter or margarine, melted - 1/3 item
- salt - 1/2 tsp
- chili powder - 1/4 tsp
- cayenne pepper - 1/8 tsp
- pepper - 1/8 tsp
- 1/2 cups shredded pepper Jack or Monterey Jack cheese, divided - 1 item
How to make pepper jack potatoes:
In a large bowl, combine the potatoes and onions. Combine the butter and seasoning; drizzle over the potatoes and onions. Toss to coat. Place half in a greased 13 x 9 x 2 inch baking dish. Sprinkle with half the cheeses; top with remaining potatoes and onions.Cover and bake at 400 degrees for 45-50 minutes or until potatoes are tender. Uncover; sprinkle with remaining cheese. Bake 5 minutes longer or until cheese is melted.
