Ingredients/Components

  • salt
  • flour - 3 Tbsp
  • water - 1 c
  • oil - 3 Tbsp
  • parsley - 2 tsp
  • medium onion, chopped - 1 item
  • green pepper, chopped - 1/3 c
  • clove garlic, chopped - 1 item
  • raw rice - 2 c
  • stewed tomatoes - 2 c
  • Cajun sausage
  • onion tops - 1/3 c
  • cooked chicken or shrimp - 1 lb

How to make jambalaya:

Brown sausage in Dutch oven. (Cube chicken and set aside.) Fry onion in oil; add flour and cook until brown. Add water and all other ingredients. Bring to a boil, then lower heat and cover. Raise lid occasionally to stir, but not too often. Cook until rice is tender, 45 minutes.
