Ingredients/Components

  • pkg - 1 oz
  • salt
  • water - 1/2 c
  • oil - 1 item
  • pepper - 1/4 tsp
  • chopped onion - 1/2 c
  • chili powder - 1 Tbsp
  • ground beef - 1 lb
  • shredded Cheddar cheese - 2 c
  • can tomato paste - 1 oz
  • can tomatoes - 1 oz

How to make enchiladas:

Brown meat; drain. Add tomatoes, paste, water, onion and seasonings. Simmer 10 minutes. Fry tortillas in hot oil until softened; drain. Place rounded tablespoonful of meat sauce and cheese on each tortilla. Roll up tightly. Place seam side down in an 11 3/4 x 7 1/2-inch baking dish. Top with remaining sauce and cheese. Cover with aluminum foil and bake at 375° for 25 minutes. Makes 6 to 8 servings.
