Chicken scampi
Ingredients/Components
- salt - 1/2 tsp
- flour - 2 Tbsp
- butter - 1/2 c
- water - 1/4 c
- oil - 1/4 c
- pepper - 1/4 tsp
- grated Parmesan cheese - 1/4 c
- chicken broth - 1/2 c
- bread crumbs - 1/2 c
- oregano - 1 tsp
- cloves garlic - 2 item
- parsley - 1 item
- Mozzarella cheese, grated - 1 item
- boneless chicken - 2 lb
- white wine or 1/4 c - 1/2 c
How to make chicken scampi:
Melt butter in large skillet. Saute chicken until opaque but not brown. Add salt and pepper. Remove chicken. Mix 1/2 wine and flour together. Simmer until light golden brown (quick). Stir in oregano and rest of wine, chicken broth, oil and garlic. Mix well. Put chicken in a dish. Pour mixture over top. In small bowl mix grated Parmesan cheese, bread crumbs and parsley. Sprinkle over top of chicken. Sprinkle with Mozzarella cheese. Bake at 350° for 30 minutes, uncovered.Recipe categories: Chicken, Main dish, Poultry.
