Ingredients/Components

  • egg - 1 item
  • grated Parmesan cheese - 1/4 c
  • salt and pepper - 1 item
  • Mozzarella cheese - 8 oz
  • Ricotta cheese - 16 oz
  • spaghetti sauce - 1/4 c
  • garlic powder to taste - 1 item
  • medium eggplant, sliced 1/4-inch round - 2 item
  • bread crumbs, seasoned with garlic and Italian seasonings to taste - 1 item

How to make eggplant parmesan:

Dip eggplant into egg, then into seasoned bread crumbs. Fry eggplant on both sides. Place on paper towels to dry off excess oil. Coat bottom of a large casserole dish with sauce. Place eggplant on top. Add filling. Place eggplant on top. Coat with sauce. Bake at 350° for 1/2 hour.
