Ingredients/Components
- egg - 1 item
- grated Parmesan cheese - 1/4 c
- salt and pepper - 1 item
- Mozzarella cheese - 8 oz
- Ricotta cheese - 16 oz
- spaghetti sauce - 1/4 c
- garlic powder to taste - 1 item
- medium eggplant, sliced 1/4-inch round - 2 item
- bread crumbs, seasoned with garlic and Italian seasonings to taste - 1 item
How to make eggplant parmesan:
Dip eggplant into egg, then into seasoned bread crumbs. Fry eggplant on both sides. Place on paper towels to dry off excess oil. Coat bottom of a large casserole dish with sauce. Place eggplant on top. Add filling. Place eggplant on top. Coat with sauce. Bake at 350° for 1/2 hour.Recipe categories: Eggs/dairy, Main dish, North american.
