Eggplant parmesan
Ingredients/Components
- Parmesan cheese - 3 Tbsp
- bread crumbs - 1 c
- salt and pepper to taste - 1 item
- tomato sauce - 1 c
- oregano to taste - 1 item
- Cheddar cheese, grated - 3/4 c
- medium eggplant, peeled and sliced - 1 item
- stewed tomatoes - 1 c
How to make eggplant parmesan:
Simmer eggplant in pan of boiling salted water for 10 minutes. Drain.Preheat oven to 350°. Layer ingredients in 1 1/2-quart casserole as follows: 1/2 of tomatoes, eggplant, bread crumbs, seasonings, tomato sauce and cheese. Repeat layers. Bake, uncovered, for 20 minutes.
