Ingredients/Components

  • milk - 1 c
  • salt - 1/4 tsp
  • flour - 1/4 c
  • water - 2 Tbsp
  • pepper - 1/8 tsp
  • chopped onion - 2 tsp
  • chopped celery - 2 tsp
  • thick white sauce - 1 c
  • Dip:1 egg
  • chopped leftover fried chicken - 2 c
  • Let set in refrigerator until firm

How to make chicken croquettes:

Dip:1 egg2 Tbsp. water Mix all ingredients. Let set in refrigerator until firm. Shape into balls. Roll in flour. Season with salt and pepper. Dip in mixture of one egg and 2 tablespoons water, then in fine bread crumbs. Fry in deep fryer at 365° until golden brown, 1 1/2 to 2 minutes. Drain until serving time. Makes 8 croquettes. Serve with cheese sauce.Thick Sauce for Croquettes:1/4 c. butter1/4 c. flour1/4 tsp. salt1/8 tsp. pepper1 c. milk Melt butter in saucepan, blend in flour and seasoning. Stir until mixture is smooth (bubbly). Remove from heat and stir in milk. Bring to boil, stirring constantly for 1 minute.

Cheese Sauce: Use same method only thinned down a little with more milk and 1 cup cheese added before boiling (1 minute).
