Chicken croquettes
Ingredients/Components
- butter or margarine - 3 Tbsp
- salt - 1/4 tsp
- egg - 1 item
- lemon juice - 1 tsp
- cracker crumbs - 1 item
- grated onion - 1 tsp
- chopped parsley - 2 Tbsp
- oil for deep frying - 1 item
- cup flour - 1/4 item
- cup milk - 1/2 item
- hot sauce to taste - 1 item
- cup chicken broth - 1/2 item
- cups finely chopped, cooked chicken - 1-1/2 item
- dash of paprika and pepper - 1 item
How to make chicken croquettes:
Melt butter, blend in flour. Add milk and broth; cook and stir until mixture thickens. Add parsley, lemon juice, onion and seasonings. Let cool slightly; then add chicken. Chill.Shape into balls and roll in cracker crumbs. Mix egg with 2 tablespoons water. Dip balls in egg mixture then in crumbs again. Fry about 3 minutes.
These freeze well after rolling in crumbs.
