Ingredients/Components
- milk - 3 c
- salt
- flour - 1/2 c
- butter - 1/4 c
- water - 2 c
- dry mustard - 1/2 tsp
- pepper - 1/4 tsp
- Worcestershire sauce
- chopped onion - 3/4 c
- chopped celery - 3/4 c
- parsley flakes - 2 Tbsp
- chopped tomatoes - 1 c
- diced potatoes - 2 c
- grated Cheddar cheese - 1/4 lb
How to make cheese soup:
In a large kettle, cook potatoes, celery and onions in salted water for about 15 minutes until tender. Set aside.In medium saucepan, melt the butter. Blend in flour. Add pepper, mustard, sauce and milk, stirring constantly. Cook until thickened. Add cheese; stir until melted. Stir in parsley and tomatoes. Add to this cream mixture the cooked potatoes, stirring gently. Do not overcook, the cheese will curdle.
