Ingredients/Components

  • cloves garlic, minced - 2 item
  • soy sauce - 1 Tbsp
  • chicken broth
  • dash of oregano - 1 item
  • stalk celery, chopped - 1 item
  • dash of cayenne pepper - 1 item
  • pearl barley - 1/2 c
  • large tomato, peeled and chopped - 1 item
  • leaf basil - 1/2 tsp
  • dash of thyme - 1 item
  • small carrots, chopped - 3 item
  • chicken thighs, skinned and trimmed of fat - 1 pkg

How to make chicken and barley soup:

Place all ingredients in large pot. Bring to boil. Reduce to simmer, cover and cook about 1 1/4 hours, stirring occasionally. Remove thighs, cool slightly, remove meat from bone and return to soup. Discard bones. Simmer 15 minutes. Add 2 tablespoons parsley and salt and pepper to taste. Serve.
