Gazpacho with shrimp
Ingredients/Components
- salt - 1/2 tsp
- red wine vinegar - 1 Tbsp
- cloves garlic - 2 item
- sprigs parsley - 8 item
- black pepper - 1/4 tsp
- 1/4 lb - 1 c
- small cucumber, peeled - 1/2 item
- can whole tomatoes with juice - 1 1/2
- small green bell pepper - 1 item
- bunch scallions 6 to 8 - 1 item
- each cans low-sodium, regular vegetable juice cocktail - 2 1/2
- pinch of ground cumin - 1 item
How to make gazpacho with shrimp:
In food processor or blender, mince the garlic and parsley. Add the cucumber, green pepper and scallions and coarsely chop.
