Ingredients/Components
- salt - 1 tsp
- water - 4 qt
- pepper - 1 tsp
- clove garlic, minced - 1 item
- basil - 1 tsp
- onion, chopped - 1 item
- sprigs parsley - 5 item
- carrots, sliced - 3 item
- thyme - 1 tsp
- carrot, sliced - 1 item
- rib celery, chopped - 1 item
- ribs celery, sliced - 3 item
- noodles or rice - 3 oz
- cubed chicken - 1 item
- to 4 peppercorns - 3 item
- skinless chicken breasts boneless - 1 lb
How to make chicken soup:
Cook 1 hour the water, chicken breasts, 1 carrot, 1 onion, 1 teaspoon salt, basil, peppercorns, 1 rib of celery, garlic, thyme and parsley. Skim foam. Refrigerate chicken. Skim fat.Bring broth to a boil and add 1 teaspoon of salt, pepper, noodles or rice, 1 cup onion, 3 carrots, 3 ribs of celery and cubed chicken. Simmer until vegetables and noodles or rice are tender. Makes 16 cups.
