Ingredients/Components

  • milk - 3 c
  • salt - 1 tsp
  • butter - 4 Tbsp
  • buttermilk - 3/4 c
  • baking powder
  • baking soda - 1/2 tsp
  • plus 1 Tbsp - 1/3 c
  • onion, diced - 1 item
  • cooked, cubed potatoes - 3 c
  • seasoning to taste - 1 item
  • baco chips - 4 Tbsp
  • 303 cans cream-style corn
  • cubed yellow cheese
  • Add corn and heat

How to make corn cheese soup:

Melt butter and lightly brown onion and baco chips. Add corn and heat. Add milk and potatoes. Add seasonings and cheese. Heat until cheese is stringy. Makes 2 1/2 quarts. Serve with Buttermilk Biscuits.Buttermilk Biscuits:2 c. flour1 1/2 tsp. baking powder1 tsp. salt1/2 tsp. baking soda1/3 c. plus 1 Tbsp. Crisco3/4 c. buttermilk Cut Crisco into blended dry ingredients until it resembles coarse cornmeal. Add buttermilk all at once and stir with fork until dough follows fork. Knead lightly 10 to 15 times. Gently roll out 1/2-inch thick. Cut into 1 1/2-inch circles. Bake at 450° for 10 to 15 minutes. Makes 2 dozen biscuits.
