  • butter, softened - 1/4 c
  • sugar
  • cinnamon - 2 tsp
  • eggs - 4 item
  • vanilla - 3 tsp
  • chopped pecans - 1/2 c
  • pkg
  • salt - 1 tsp
  • oil
  • soda - 2 tsp
  • grated carrots
  • baking powder - 2 tsp
  • all-purpose flour plain - 2 c
  • large can crushed pineapple, drain and reserve syrup - 1 item

How to make carrot cake:

Icing:1 (3 oz.) pkg. cream cheese, softened1/4 c. butter, softened3 tsp. vanilla1 box powdered sugar (16 oz.)1 large can crushed pineapple, drain and reserve syrup Mix sugar and oil. Beat in one egg at a time. Add remaining ingredients. Mix well and pour batter into 3 (9-inch) cake pans. Bake at 350° for 30 or 35 minutes until brown. Prepare icing beforehand. When layers are cool, ice.

Blend cream cheese, butter and vanilla. Add powdered sugar and enough pineapple juice to make spreading easy. Place pineapple on top of cake.
