Ingredients/Components
- butter, softened - 1/2 c
- sugar - 2 c
- cinnamon - 2 tsp
- eggs - 4 item
- chopped pecans - 1 c
- pkg - 1 lb
- vanilla extract - 2 tsp
- salt - 1/2 tsp
- flour - 2 c
- oil - 1 c
- soda - 2 tsp
- baking powder - 1 tsp
- canned pumpkin - 2 c
- cream cheese, softened - 8 oz
How to make pumpkin cake:
Sift flour, soda, salt, baking powder and cinnamon together. Beat sugar, oil and eggs in mixer bowl until frothy. Add flour mixture; beat well. Stir in pumpkin and 1 cup pecans. Pour into greased and floured 9 x 13-inch cake pan. Bake at 350° for 45 minutes. Cool.Cream butter and cream cheese in mixer bowl until light. Add confectioners sugar gradually, beating until fluffy. Stir in vanilla. Spread over cooled cake. Sprinkle with remaining 1/4 cup pecans. Yield: 15 servings.
