  • butter, softened - 1/2 c
  • sugar - 2 c
  • cinnamon - 2 tsp
  • eggs - 4 item
  • chopped pecans - 1 c
  • pkg - 1 lb
  • vanilla extract - 2 tsp
  • salt - 1/2 tsp
  • flour - 2 c
  • oil - 1 c
  • soda - 2 tsp
  • baking powder - 1 tsp
  • canned pumpkin - 2 c
  • cream cheese, softened - 8 oz

How to make pumpkin cake:

Sift flour, soda, salt, baking powder and cinnamon together. Beat sugar, oil and eggs in mixer bowl until frothy. Add flour mixture; beat well. Stir in pumpkin and 1 cup pecans. Pour into greased and floured 9 x 13-inch cake pan. Bake at 350° for 45 minutes. Cool.

Cream butter and cream cheese in mixer bowl until light. Add confectioners sugar gradually, beating until fluffy. Stir in vanilla. Spread over cooled cake. Sprinkle with remaining 1/4 cup pecans. Yield: 15 servings.
