  • sugar - 2 c
  • cinnamon - 2 tsp
  • eggs - 4 item
  • vanilla - 1 tsp
  • chopped pecans - 1/2 c
  • pkg - 1 oz
  • salt - 1 tsp
  • oil
  • soda
  • grated carrots - 2 c
  • baking powder - 2 tsp
  • stick butter - 1 item
  • large can crushed pineapple, drained - 1 item
  • flour all-purpose - 2 c
  • Mix oil, sugar and eggs

How to make carrot cake:

Sift all dry ingredients. Mix oil, sugar and eggs. Beat after each addition. Add dry ingredients to oil mixture and mix well. Add carrots, pineapple and nuts. Bake at 350° in three 9-inch pans for 35 to 40 minutes.Frosting:1 box powdered sugar, sifted1 stick butter1 (8 oz.) pkg. cream cheese1 tsp. vanilla Mix thoroughly and spread on cool cake.
