  • packaged biscuit mix - 1/3 c
  • Parmesan cheese - 1/4 c
  • pepper - 1/8 tsp
  • slightly beaten eggs - 2 item
  • shredded unpared zucchini - 2 c
  • butter - 2 Tbsp

How to make zucchini rounds:

In mixing bowl, stir together biscuit mix, cheese and pepper. Stir in beaten eggs, just until mixture is moistened. Fold in zucchini. In a 10-inch skillet, melt butter over medium heat. Using 2 tablespoons mixture for each round, cook for 2 to 3 minutes on each side or until brown. Keep warm until served. Makes 12 rounds or 6 servings.
