  • melted margarine - 1/2 c
  • dairy sour cream - 1 c
  • shredded carrots - 1 c
  • chopped onion - 1/4 c
  • can condensed cream of chicken soup - 1 item
  • squash yellow and zucchini - 6 c
  • seasoned stuffing mix Stove Top - 1 (6

How to make summer squash casserole:

In a saucepan, cooked squash and onion in boiling salted water for 5 minutes. Drain. Combine soup and sour cream. Stir in shredded carrots. Fold in drained squash and onion. Combine stuffing mix and butter or margarine. Spread half of it (stuffing mix) on bottom of a 12 x 7 1/2 x 2-inch baking dish. Spoon vegetable mixture on top. Sprinkle remaining stuffing over vegetables. Bake in a 350° oven for 25 to 30 minutes or until heated through.
