Ingredients/Components
- butter or oleo - 2 Tbsp
- biscuit mix - 1/3 c
- pepper - 1/8 tsp
- grated Parmesan cheese - 1 c
- slightly beaten eggs - 2 item
- shredded unpared zucchini - 2 c
How to make zucchini rounds:
In a bowl mix biscuit mix, cheese and pepper. Stir in eggs just until mixture is moistened. Fold in zucchini. In skillet, melt butter over medium heat. Using 2 tablespoons mixture for each round, cook 2 to 3 minutes on each side or until brown.Recipe categories: Squash, Appetizers, Vegetables.
