Ingredients/Components

  • butter or margarine - 2 Tbsp
  • biscuit mix - 1/3 c
  • pepper - 1/8 tsp
  • grated Parmesan cheese - 1/4 c
  • slightly beaten eggs - 2 item
  • shredded unpared zucchini 2 medium zucchini - 2 c

How to make zucchini rounds:

In mixing bowl, stir together biscuit mix, cheese and pepper. Stir in beaten eggs just until moistened. Fold in zucchini. Melt margarine in 10-inch skillet over medium heat. Use 2 tablespoons mixture for each round and cook 2 to 3 minutes on each side, or until brown. Makes 6 servings.
