Ingredients/Components

  • sugar
  • cornstarch - 1 Tbsp
  • nutmeg - 1 tsp
  • vinegar
  • finely chopped onion - 4 c
  • celery seed - 1 tsp
  • red pepper - 1 tsp
  • turmeric - 1/4 tsp
  • red peppers, chopped - 2 item
  • finely chopped zucchini or yellow summer squash - 10 c
  • green peppers, chopped* - 2 item
  • salt use canning salt - 1/3 c

How to make zucchini relish:

Combine zucchini, onion, green peppers, red peppers and salt in a large cooker or canner. Mix well and let stand overnight. Drain and rinse well with cold water. Add remaining ingredients and boil 20 to 30 minutes. Ladle into hot jars and adjust lids. Process in boiling water bath 15 minutes. Makes 6 pints.

*I use whatever kind of sweet peppers that I have. To make it really pretty, use 2 green peppers, 1 red pepper and 1 yellow one.
