Zucchini relish
Ingredients/Components
- sugar - 6 c
- salt - 5 Tbsp
- cornstarch - 3/4 Tbsp
- nutmeg - 3/4 tsp
- vinegar
- dry mustard - 1 Tbsp
- sliced zucchini - 12 c
- black pepper - 1/2 tsp
- celery seed
- green pepper - 1 item
- red pepper - 1 item
- turmeric - 3/4 tsp
- sliced onions - 4 c
How to make zucchini relish:
Put zucchini, onions and peppers through food grinder. Mix well with 5 tablespoons salt. Let stand overnight.Rinse with cold water and drain well in a colander. In a large kettle, mix vinegar, sugar, cornstarch and spices. Cook until it starts to thicken. Then add zucchini mixture and mix well. Cook slowly for 30 minutes. Can and seal at once.
