Zucchini relish
Ingredients/Components
- sugar
- salt - 1/2 c
- cornstarch - 1 Tbsp
- nutmeg - 1 tsp
- vinegar
- black pepper - 1/2 tsp
- celery seed - 1 tsp
- red pepper - 1/2 tsp
- diced onions - 4 c
- green peppers - 2 item
- turmeric - 1 tsp
- red peppers - 2 item
- ground zucchini squash - 10 c
How to make zucchini relish:
Put vegetables through a food chopper and sprinkle with salt. Marinate overnight in covered bowl in refrigerator, then drain and rinse with cold water. Mix and heat together remaining ingredients. Mix with squash and boil 20 to 30 minutes. Pack in hot jars. Makes 7 pints.This relish is good over hot dogs, hamburgers and greens such as collards and salad. I use half yellow straight neck squash to give it color.
