Zucchini relish
Ingredients/Components
- sugar - 4 6
- cornstarch - 1 Tbsp
- nutmeg - 1 tsp
- vinegar
- black pepper - 1/2 tsp
- celery seed - 2 tsp
- celery - 2 c
- red pepper - 1/8 tsp
- turmeric - 1 tsp
- onions - 4 c
- large green peppers - 2 item
- zucchini - 10 c
How to make zucchini relish:
Grind first 4 ingredients. Add 5 tablespoons of salt and enough cold water to cover and let stand overnight. Rinse in cold water 3 times and drain, then add the remaining ingredients. Cook for 30 minutes. Seal in jars.Recipe categories: Squash, Condiments, etc., Zucchini.
