Zucchini relish
Ingredients/Components
- sugar - 6 c
- salt - 5 Tbsp
- cornstarch - 2 Tbsp
- nutmeg - 1 Tbsp
- vinegar
- pepper - 1/2 tsp
- celery seed - 2 Tbsp
- turmeric - 1 Tbsp
- ground onions - 2 c
- ground or shredded zucchini - 10 c
- red sweet peppers, ground for color - 3 item
How to make zucchini relish:
Mix first 4 ingredients together in large bowl; add enough water to cover vegetables. Let stand overnight in refrigerator. Next day, drain. Add remaining ingredients (in large pan). Bring to a slow boil over low heat (about 30 minutes). Put into sterilized jars while hot. Slow boil in hot water bath for 30 minutes.Recipe categories: Squash, Condiments, etc., Zucchini.
