  • sugar - 2 c
  • eggs - 3 item
  • vanilla - 2 tsp
  • salt - 1 tsp
  • chopped nuts - 1 c
  • flour - 3 c
  • oil - 1 c
  • baking powder - 1 tsp
  • baking soda - 1 tsp
  • raisins - 1 c
  • drained crushed pineapple - 1 c
  • finely grated zucchini - 2 c

How to make zucchini pineapple bread:

Beat eggs until foamy. Add oil, zucchini, pineapple and raisins. Add dry ingredients; mix well. Add nuts. Bake in 2 greased and floured loaf pans (8 1/2 x 4 1/2 x 2 3/4-inch) at 350° for 1 hour or until toothpick comes out clean. Bread freezes well wrapped in foil and put into plastic bag.
